It\u2019s also quite a process that we watch being made regularly in our home.<\/p>\n<p>It\u2019s called\u00a0<a title=\"In Spanish\" href=\"http:\/\/es.wikipedia.org\/wiki\/Casabe_de_yuca\" target=\"_blank\"><em>casabe\u00a0<\/em><\/a>and it\u2019s made labouriosly with tapioca and a lot of patience.\u00a0<a title=\"All you ever wanted to know about Tapioca\" href=\"http:\/\/en.wikipedia.org\/wiki\/Tapioca\" target=\"_blank\">Tapioca\u00a0<\/a>is a root vegetable that\u2019s as regularly used as plantain here. It\u2019s super starchy, has a very mild flavour and is extremely malleable. The perfect expansive filler for staving off hunger.<\/p>\n<p>Peeled tapioca are grated by hand into a fine pulp and then left to soften for an hour or two. Then over a large sieve the tapioca is washed with water to bind the vegetable in to a gummy consistency. The water is collected below the sieve and then left to sit over night so that all the sediment gathers at the bottom of a large container.<\/p>\n<figure id=\"attachment_6166\" aria-describedby=\"caption-attachment-6166\" style=\"width: 598px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/seecolombia.travel\/blog\/wp-content\/uploads\/2013\/01\/DSC_0358.jpg\"><img loading=\"lazy\" class=\"size-full wp-image-6166\" title=\"Yummers\" src=\"http:\/\/seecolombia.travel\/blog\/wp-content\/uploads\/2013\/01\/DSC_0358.jpg\" alt=\"Yummers\" width=\"598\" height=\"400\" srcset=\"https:\/\/seecolombia.travel\/blog\/wp-content\/uploads\/2013\/01\/DSC_0358.jpg 598w, https:\/\/seecolombia.travel\/blog\/wp-content\/uploads\/2013\/01\/DSC_0358-300x200.jpg 300w\" sizes=\"(max-width: 598px) 100vw, 598px\" \/><\/a><figcaption id=\"caption-attachment-6166\" class=\"wp-caption-text\">Yummers<\/figcaption><\/figure>\n<p>The next day the pulpy tapioca is mixed with the soft sediment and hand kneaded into a spongy mixture. It\u2019s then rolled out flat into a large circle and roasted on a thin pan over a wood fire.<\/p>\n<p>Most often it\u2019s served with soupy fish, a chilli paste made from local fruits or eaten at breakfast with a sweet local jam. It\u2019s an acquired taste that we\u2019re growing to like.<\/p>\n<p>After the last cassabe was made we ate a meal of fish, chilli and fresh juice from our garden.
