It took a trip to Buenos Aires and a visit to a traditional pastry house<\/strong> or confiteria for Ana Maria Torres de Nav\u00e9z, the owner and chef behind\u00a0Baked by Ana<\/a>, to realize that her passion\u00a0wasn’t\u00a0in languages and administration, as she first thought, but in food.<\/p>\n

\u201cI love food, I love to eat<\/strong> and my family has always taken care with food and sitting down at the table to eat, but seven years ago when I went to Argentina, that was the first time I thought about studying food,\u201d Ana Maria says.<\/p>\n

\u201cWhen I moved to Argentina to study administration, all my friends studied cooking<\/strong>. It was all new and exciting for me. So I started studying cooking and I loved it.\u201d<\/p>\n

\u201cTo make the food was really appealing and when I started studying I realised it was what I loved.<\/strong> I never went back to teaching languages.\u201d<\/p>\n

When Ana Maria arrived back in Bogot\u00e1 she knew she wanted to open up her own space filled with sweet-smelling baked goods, inspired by the traditional tea and pastry houses or confiterias of Argentina.<\/strong><\/p>\n

\u201cI knew I wanted to own a confiteria. They\u2019re charming. I always describe them like a library, there\u2019s the history section which is chocolate, the science area which are the cakes<\/strong>. It\u2019s very Italian. That\u2019s what I wanted,\u201d Ana Maria recalls.<\/p>\n

When Ana Maria returned to Bogot\u00e1 she started to learn how to use the ingredients at \u00a0Bogota’s\u00a0high altitude and would spend any spare change she had on cooking utensils.<\/strong><\/p>\n

\u201cIngredients work differently here in\u00a0Bogot\u00e1\u00a0because of the air pressure<\/strong> so I had to learn about them and how they work here,\u201d she said.<\/p>\n

\u201cAnd if I had a spare $10, I would buy a spatula, or a pan. I had a huge amount of things and when we opened, I already had everything we needed for the kitchen.\u201d<\/p>\n

Now\u00a0Baked by Ana<\/strong>\u00a0is beautiful situated in the trendy\u00a0Usaqu\u00e9n<\/a>\u00a0and the store is stocked with more than 50 varieties of cupcakes<\/strong> which are on rotation with about 15-20 different flavours available each day. But it was at the weekly Usaqu\u00e9n flea market that Ana Maria began selling her cakes.<\/p>\n

\u201cLittle by little Baked by Ana became what it is today. We were at the flea market for about a year while we were searching for a more permanent place,\u201d Ana Maria recalls.<\/p>\n

During the week, Ana Maria says that the store is calm and filled with regulars<\/strong> and just as she tells me this a group of women sitting at the table behind us get up and say thank you and goodbye to Ana Maria.<\/p>\n

\u201cI always knew we would be in Usaqu\u00e9n, I love it.\u201d<\/p>\n

The next time you\u2019re in Usaqu\u00e9n, pay Ana Maria a visit and try one of her favourite cupcakes.<\/p>\n

1. \u00a0Mole Picante<\/strong>\u00a0– sweet but with a bit of a kick, suddenly it\u2019s hot and spicy in your mouth.<\/p>\n

2. \u00a0Ginger cupcake\u00a0<\/strong>– made with real ginger, also sweet with a bit of heat.<\/p>\n

3. \u00a0Wasabi cupcake<\/strong>\u00a0\u2013 it\u2019s like soil, there\u2019s a real earthiness to it. But it\u2019s not too hot.<\/p>\n

4. \u00a0Brownie<\/strong>\u00a0\u2013 vanilla cake with vanilla topping and then a brownie stuffed in it, yum!<\/p>\n

5. \u00a0Oreo cupcake<\/strong>\u00a0\u2013 Deliciously chocolatey and Ana Maria\u2019s husband\u2019s favourite.<\/p>\n
